What you’ll need:
4 fresh soft shell crabs (available for a limited time at Rosewood Market!)
½ cup all-purpose flour
Salt and freshly ground black pepper, to taste
2 tablespoons olive oil
2 tablespoons unsalted butter
2 cloves garlic, minced
½ cup dry white wine
Juice of 1 lemon
1 tablespoon capers (optional)
1 tablespoon fresh parsley, chopped
How to make it:
Prepare the crabs: If your crabs aren’t already cleaned, ask our team for tips. Pat them dry with paper towels.
Dredge lightly: In a shallow dish, season the flour with salt and pepper. Lightly coat the crabs, shaking off excess flour.
